Holiday Dinner "Cheat" Dessert | Only Three Ingredients


My family is huge! That's how I grew up, so I've always been accustomed to big family events. With a family as big as mine, we like to throw down (eat...in my Southern slang). And rightfully so, because (not bragging) I've got some Grade "A" chefs in my family. :-)

With Thanksgiving just behind us (last week), the only thing I ever really had to worry about at these large family functions is showing up and looking cute. Well not this year. Because this year, I received a text the Monday before dinner asking me to bring a dessert!

Now I'm Southern, but don't get anything confused by the fact that I was "asked" to bring a dessert. In actuality, it was really a requirement. And it came with an underlying expectation that it better be a good, non-store made dessert. And believe me... I got the message loud and clear! Because I knew it came from a good loving place, but I also knew I needed to bring my "A" game too!

For someone like me, you can't just bring in a store bought anything. My family would not let me hear the end of the kitchen debacle for at least a whole year or until I was able to redeem myself. Talk about tough love! :-)

So...I strolled over to Pinterest because I needed something simple, but good and it had to be something of a comforting nature. Now don't get me wrong, I can cook, but I'll be the first to admit that me and baking just don't always work out. So, we've (yes, the oven and I) try to stay out of each others way for dishes that require too much work. Hey, I'm a woman that can admit her limitations.

So, I stressed myself out trying to figure out something that could be prepared before hitting the road for the holiday break. I finally settled on a peach cobbler dump cake. And even though I had to risk my life in the grocery store the day before Thanksgiving with the masses, the dish was pretty simple to prepare. Here's what I did...


1. Purchase the pictured: (1) stick of Blue Bonnet, (3) cans of sliced peaches, and one box of yellow cake mix.


2- Pour (2) cans of the peaches in your baking dish of choice (with the heavy syrup). Drain the syrup from the 3rd can and pour just the peaches (from the 3rd can) into the baking dish. Spread the peaches evenly around the dish. Now is a good time to preheat your oven -- 350 degrees.


3. Sprinkle the mixture from the yellow box cake make on top of the peaches. I only used a little over half of the mix and saved the rest for a later time.


4. Cut up the butter/margarine and spread over the top of the mixture. I also sprinkled a little cinnamon on top.


5. Bake at 350 for about 45 minutes or so depending on your oven. I actually baked for an additional 20-25 minutes.


6. I allowed everything to cool for about 15 minutes or so. The dish turned out wonderful and it was a hit with the family, who all seemed shocked that I could put together such a tasty dessert.

For an added treat, pair this warmed dessert with vanilla ice cream. I prefer Bryers, but to each their own. Even if you aren't big on ice cream, this dish is quite tasty on it's own.
