What's for Lunch Edition | Vegan Black Bean & Lime Soup


 

Every now and again, I have a complete lazy day where I don't pack my usual food tote, as I head out to the city for work. Most people call it a lunch bag, but I have to call mine something else because I pack all the food/snacks I plan to eat until later in the evening.


Yes, I know--it's very Type A of me. :-)

As you may have already guessed, today was one of those days. 

But let me explain...it's just two days before Thanksgiving and I am SO ready for a break...so I am already on vacation mode! 

Anyways, I decided to share what I had in my office food stockpile for a lazy, chilly day--such as today!

Ah, I remember this one. I picked it up a few weeks ago while on a lunch run to Whole Food's for their prepared guacamole. OMG, that's some really good stuff!!! Addictive too! 

Anyway, the packing said vegan (always a winner with me) and it looked simple enough...so into my cart it went. 

Okay. Today isn't raining, but the temperature walking into the office this morning was cold enough that I dare to venture back outside until time to officially go home for the day. :-)

At first glance, this soup sort of reminded me of ramen noodle in a cup. By the way, I used to love those. Actually, I still do, but I never TRULY realized just how horrible they are for you! :-(

The nutritional information isn't as bad as most processed soups, but the sodium is high...so I have to be sure to get my water intake in before bed. 

I keep a universal soup/tea/coffee cup at work for moments like these.  I call it universal because it's the perfect size for various meals/drinks.

And on a scale of 1 to 10 (10 being the highest), I would rank it a 6.5.

Of course I grabbed some crackers from the break-room for a wonderful lunch of soup and crackers for just under $3 ($2 soup and $1 crackers) on a chilly day....
